Salad is not something that always sounds that appealing to us, and although that’s basically what this is, it doesn’t feel that way. This is great for hot days when it’s necessary to cook something that requires little time in front of anything hot and a cool, fresh result feels crucial. We found this recipe on foodnetwork.com. The recipe doesn’t call for it, but for the cucumber part of it, we mix them with a little bit of sweet red chili sauce. We serve these with a variety of sides, too, like sriracha, peanuts, cilantro and limes. It feels like a little feast, that’s so easy to prepare. Our favorite wine to pair with this is Yalumba Viognier from Australia. It’s a wine with a lot of fruit, which we don’t normally go for, but it’s perfect with the spice of the food.
